Directions: Grate potatoes; place in a colander and rinse with cold water. Drain and pat to remove excess water. Heat 2 tbsp oil in a skillet over medium and and add potatoes with a 1/8 tsp each, seasoned salt and garlic powder. Cook, stirring occasionally, until golden and tender (approx. 12-15 mins). While potatoes are cooking, sauté onions, bell peppers, mushrooms, and sausages in a separate pan, and combine with potatoes once potatoes are done. Season with additional seasoned salt, pepper, and serve!
Note: you can cook this “one skillet” but it will take longer as the veggies let off water and it will take longer to brown your potatoes. We cook our veggies together, sausage on its own, and then add all to the potatoes.
