Cherry-Lemon Kale Crunch Salad is the perfect festive addition to any holiday lineup!
1 large bunch curly kale
1 apple, any variety, diced
1/3 cup dried cranberries or cherries
1/4 cup sliced almonds
2 tbsp + 1 tbsp Big Horn Lemon Olive Oil
2 tbsp Big Horn Black Cherry Balsamic Vinegar
salt and pepper, to taste
Whisk together 1 tbsp olive oil and balsamic vinegar; set aside.
Thoroughly wash kale. Drain leaves and pat dry. Tear leaves into bite sized pieces. Drizzle kale with 2 tbsp olive oil and sprinkle with a few pinches of salt. Massage kale leaves for 1 minute, until evenly coated. To leaves, add diced apple, dried cranberries, almonds and vinaigrette. Toss well to mix. Serve immediately.
