Coconut & Carrot Salad

Ingredients:
2 cups shredded carrots
3/4 cups shredded, unsweetened coconut
1/2 cup diced pineapple

DRESSING:
1/3 cup Greek yogurt
2-3 tbsp Big Horn Cara Cara Orange Vanilla or Coconut Balsamic
1/2 tsp vanilla extract
cashew pieces, garnish

Directions: whisk together dressing, adding additional balsamic to meet desire consistency and flavor. Add carrots, coconut, and pineapple and toss until well combined. Chill for 30 minutes prior to serving. Enjoy!
