1 can white beans, rinsed and drained
2 large carrots, peeled
3-4 large cloves garlic, peeled
1/4 cup Big Horn UP extra virgin olive oil
juice of half a lemon
1/4 tsp maple syrup
1/4 tsp each, salt and pepper
Directions: place carrots in an oven safe dish and cover with a silpat baking sheet* or foil. Place garlic cloves in foil pouch with a drizzle of olive oil, salt, and pepper. Roast carrots and garlic at 375 until carrots are tender and garlic is golden, approx. 30-40 mins. Add carrots and garlic to a blender or food processor with remaining ingredients and blend until smooth.
