1 large cucumber, thinly sliced
2 tbs. Champagne wine vinegar
1 tbs. Jalapeno balsamic vinegar
2 tbs. Baklouti Green Chili olive oil
Salt and pepper
Place sliced cucumbers in a container with a lid. Mix together the remaining ingredients. Pour over cucumbers and let sit in the refrigerator until ready for use.
Serve over fish, meats, salads etc. Substitute Chipotle olive oil for a less spicy version.
