Sweet Potato Hash with Fresh Pesto

Are you a skillet meal fan? We sure are! 🤩 One-pan meals like this Sweet Potato Hash with Fresh Pesto are quick, delicious, and a hit with the whole family!

Oh, and cleanup is an absolute breeze, too!



Step 1: Preheat oven to 400 degrees and heat 1-2 tbsp Big Horn olive oil in a cast iron skillet over medium heat (don’t go too hot!).

Step 2: Add peppers and onions, and sauté over medium high heat until tender. Remove and set aside.

Step 3: Add sweet potatoes and a pinch of salt and pepper. Cook for 10-12 minutes, or until potatoes are slightly tender and can be pierced with a fork.

Step 4: Remove from heat and carefully crack 4-6 eggs on top of skillet mix, spreading evenly apart.

Step 5: Place skillet in oven for 11-15 minutes (time based on egg-cook preference). Note: 11-12 mins will result in an over easy egg, 13-14 over medium, 15+ fully cooked.

Step 6: Top with pesto and enjoy!
