Chicken, Vegetable & Rice Soup Recipe

Ingredients:
- 2 Tbsp Big Horn UP Extra Virgin Olive Oil
- 1 Small Diced Yellow Onion
- 2 Cloves Minced Garlic
- 1 12oz Bag Mixed Frozen Veggies
- 1 Cup Dry White Rice
- 6 Cups Broth
- 2-3 Tsp of Mixed Seasoning (E.g., a garlic & herb blend)
- 2 Cups Shredded Rotisserie Chicken
Instructions:
Step 1: Heat a large soup pot on medium. Warm 2 tbsp Big Horn UP Extra Virgin Olive Oil and then add 1 small diced yellow onion and 2 cloves minced garlic.
Step 2: Sauté for 3-4 minutes, or until tender.
Step 3: Add 1 12oz bag mixed frozen veggies, 1 cup dry white rice, 6 cups broth, and 2-3 tsp of mixed seasoning and bring to a simmer.
Step 4: Simmer for 20-25 minutes, or until rice is tender.
Step 5: Stir in 2 cups shredded rotisserie chicken and serve!
