Ingredients:

1. 1 pound of Italian turkey sausage

2. 2 vibrant red bell peppers, sliced into colorful strips

3. A generous splash of extra-virgin olive oil (about 1/4 cup). This EVOO will do nicely!

4. 2 golden yellow onions, sliced and ready to sizzle

5. A pinch of kosher salt (1 teaspoon, but feel free to eyeball it!)

6. A dash of freshly cracked black pepper (1 teaspoon for a little kick)

7. A sprinkle of dried oregano (about 1/2 teaspoon)

8. A handful of fresh, aromatic basil leaves, chopped up (1/2 cup)

9. 4 cloves of garlic, chopped and full of flavor

10. 2 hearty tablespoons of rich tomato paste

11. 1 cup of Marsala wine

12.A tiny hint of red pepper flakes (1/4 teaspoon, if you like a little heat!)

13. 1 (15-ounce) can of diced tomatoes, ready to bring some saucy goodness

14. 4 to 6 fresh and soft Italian sandwich rolls (Just about any roll or "sub-sandwich" bread will work!)

Instructions:

Act 1: Skillfully Skillet-ed
Heat up some oil in a big, sturdy pan over medium heat. Toss in the sausages and cook them until they’re nicely browned on both sides—this should take about 7 to 10 minutes. Once they look perfect, take them out and let them rest for a bit.

Act 2: Veggies Join the Party
Keep the pan on medium heat and add the sliced peppers, onions, salt, and pepper. Stir them around and cook until they’re soft and golden, about 5 minutes. Then sprinkle in the oregano, basil, and garlic, and let everything cook for another 2 minutes.

Act 3: Flavor, Flavor, Flavor!
Stir in the tomato paste and mix it up. Pour in the Marsala wine, the can of tomatoes, and some chili flakes if you want a little heat. Give it a good stir, scraping up all the yummy brown bits stuck to the bottom of the pan. That’s where the flavor is! Let everything come to a gentle simmer.

Act 4: Chop & Mix
Cut the sausages into smaller pieces (about 4 to 6 chunks each) and toss them back into the pan. Stir it all together and let the sauce cook down until it’s nice and thick—about 20 minutes.

Act 5: Complete the Masterpiece
You can spoon the sausage and veggie goodness into bowls and dig in right away. Want to make sandwiches? Split your rolls in half lengthwise and scoop out a little of the bread from the bottom (carefully—don’t poke through the crust!). Fill the roll with the sausage mixture, pop the top on, and serve immediately.
