Whether you’re fueling up for a busy day or slowing down for a cozy evening, this hash has your back.

Ingredients:

(This recipe serves 4-6)

  • 1 pound breakfast sausage (mild or spicy, your choice)
  • 1 tablespoon olive oil
  • 3 cups diced potatoes (Yukon golds or russets both work great)
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup sliced mushrooms
  • 1 small zucchini, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Optional (but highly recommended) Toppings:

  • Fried or poached eggs
  • A sprinkle of shredded cheddar or Monterey Jack
  • Chopped green onions or chives
  • Fresh parsley
  • Hot sauce
  • Avocado slices
  • A drizzle of your favorite finishing olive oil

Instructions:

Act 1: Sizzle & Brown

Set a large skillet over medium heat. Add the sausage and break it into crumbles as it cooks.

Once browned and cooked through, remove the sausage and set it aside, leaving any flavorful drippings in the pan.

Act 2: Build a Veggie Base

Add the olive oil and diced potatoes to the skillet. Cook, stirring occasionally, until they start turning golden and fork tender.

Add the onion, peppers, mushrooms, and zucchini. Continue cooking until the veggies soften and the edges get a little caramelized.

Act 3: Get Mixin'!

Stir in the garlic, smoked paprika, oregano, salt, and pepper. Return the cooked sausage to the pan and toss everything together until the flavors mingle and the skillet looks beautifully colorful.

Act 4: Finishing Touches

Let the hash cook undisturbed for a minute or two so the bottom gets a little crispy. Taste and adjust seasoning.

Top with eggs, herbs, cheese, or any add-ons you love. Serve warm and dig in.

Enjoy!
