Loaded Sausage & Veggie Hash Recipe

Looking for a quick and tasty dish for your holiday brunching? We’ve got you covered with this Loaded Sausage & Veggie Hash! 😍 Sautéed onions, peppers, mushrooms, chicken sausage, and crispy potatoes, make this savory dish a perfect brunch, brinner, or anytime meal!

Ingredients:
3-4 medium Yukon gold potatoes, grated
3 bell peppers, diced
1/2 yellow onion, diced
2 cups mushrooms, sliced
4 links uncured sausage, sliced
2 tbsp Big Horn UP, garlic, or Wild Mushroom & Sage Olive Oil
seasoned salt and pepper, to taste

Directions: Grate potatoes; place in a colander and rinse with cold water. Drain and pat to remove excess water. Heat 2 tbsp oil in a skillet over medium and and add potatoes with a 1/8 tsp each, seasoned salt and garlic powder. Cook, stirring occasionally, until golden and tender (approx. 12-15 mins). While potatoes are cooking, sauté onions, bell peppers, mushrooms, and sausages in a separate pan, and combine with potatoes once potatoes are done. Season with additional seasoned salt, pepper, and serve!

You can cook this “one skillet” but it will take longer as the veggies let off water and it will take longer to brown your potatoes. We cook our veggies together, sausage on its own, and then add all to the potatoes.
