Mediterranean Olive Oil Cake Recipe
1 1/2 cup all-purpose flour
2 tsp Baking powder
1/2 tsp Salt
1/2 cup Granulated sugar
3 Eggs (or substitution)
1/2 cup Milk (any kind)
3/4 cup Lemon Olive Oil
1/4 cup pistachio nuts, crushed
Lemon zest, optional
Preheat oven to 350° F & lightly oil a loaf or cake pan.
Mix flour, baking powder & salt in one bowl.
In another, beat sugar & eggs until fluffy.
Gradually beat in the milk, then the Lemon Olive Oil.
Add wet ingredients to dry & fold until combined, then add
crushed pistachio nuts.
Bake 40 minutes until golden brown.
Allow to cool before serving.
