Ingredients:
(This recipe makes 6 servings)
- About 1 lb spaghetti (or your favorite long pasta)
- 2 Tbsp EVOO (Any of Big Horn's Traditionals will do nicely!)
- 2 fresh Fresno chile peppers, finely chopped
- 2 cloves garlic, minced
- 1 cup dry white wine
- 1 lb jumbo-lump crabmeat, carefully checked for shells
- 2 Tbsp finely chopped flat-leaf parsley
- 1 Tbsp finely chopped dill
- 1 Tbsp finely chopped fresh mint
- 2 tsp finely grated lemon zest (bright and zippy)
- Extra drizzle of EVOO (to finish & serve)
- Kosher salt and freshly ground black pepper, to taste
Instructions:
Act 1: Boil, Baby, Boil
Bring a big pot of salted water to a rolling boil (don't be afraid to salt the water substantially!).
Add your spaghetti and cook until al dente (that perfect little bite).
Before you drain, scoop out a cup of that starchy pasta water - liquid gold for silky sauce magic later. Drain the rest and set it aside while we get things sizzling.
Act 2: Dial Up the Flavor
In a large sauté pan, heat the 2 Tbsp of EVOO over medium. Add your chopped chiles and garlic and let them mingle. You’ll know they’re ready when your kitchen smells incredible (about 3 minutes).
Pour in the white wine and let it bubble away until it’s reduced by half. That quick simmer concentrates the flavor and sets the stage for your crabby masterpiece.

Act 3: Let's Get Crabby
Toss in that beautiful lump crabmeat and gently warm it through. However, don’t overdo it! We're just performing a reheat.
Then, bring in the pasta and a splash of your reserved pasta water to help everything come together. Sprinkle in the parsley, dill, mint, and lemon zest (boom - that’s your freshness trifecta!).
