🥑 Spicy Guac & Crisp Baked Plantains

A bold, snackable, crowd-pleasing favorite

This is not your average chips-and-dip situation.

We’re talking:
• Sweet, caramelized plantains
• Crispy edges
• Creamy, spicy guacamole
• A drizzle of good olive oil to bring it all together

It’s sweet.
It’s savory.
It’s just spicy enough.

And it’s surprisingly simple to make.

Perfect for:
✔ Game day spreads
✔ Summer gatherings
✔ Taco nights
✔ A better-for-you snack plate

Why Bake Plantains Instead of Frying?

Traditional plantains are often fried — delicious, yes — but baking gives you:

• A crisp exterior without heavy oil
• Better control over texture
• A lighter, cleaner finish

And when you brush them with quality extra virgin olive oil, you get:

• Better browning
• Richer flavor
• That subtle peppery finish that balances the sweetness

Ingredients

For the Baked Plantains:

  • 2 ripe (yellow with black spots) plantains

  • 1–2 tablespoons Big Horn Extra Virgin Olive Oil

  • Pinch of sea salt

  • Optional: pinch of chili powder or smoked paprika

For the Spicy Guac:

  • 2 ripe avocados

  • 1 tablespoon Big Horn Extra Virgin Olive Oil

  • Juice of 1 lime

  • 1 small jalapeño, finely minced

  • 1 tablespoon finely diced red onion

  • 1 tablespoon chopped cilantro

  • Sea salt to taste

Optional toppings:

  • Red pepper flakes

  • Cotija cheese

  • Extra drizzle of olive oil

Instructions

1️⃣ Prep the Plantains

Preheat oven to 400°F.

Peel plantains and slice diagonally into ½-inch pieces.

Brush both sides lightly with Big Horn EVOO and sprinkle with sea salt (and optional chili powder).

Arrange in a single layer on parchment-lined baking sheet.

2️⃣ Bake to Crispy Perfection

Bake for 15 minutes.
Flip and bake an additional 10–12 minutes until golden and caramelized with crisp edges.

Let cool slightly — they’ll firm up as they rest.

3️⃣ Make the Spicy Guac

Mash avocados in a bowl.

Stir in:
• Olive oil
• Lime juice
• Jalapeño
• Red onion
• Cilantro
• Salt

Taste and adjust heat.

How to Serve

Serve plantains warm with guac spooned on top or on the side for dipping.

Finish with:
✨ A drizzle of EVOO
🌶 Extra jalapeño slices
🧂 Flaky sea salt

Flavor Tip

The magic here is contrast:

Sweet plantains
Creamy avocado
Bright lime
Peppery olive oil

It’s balanced, bold, and unexpectedly addictive.

Make It a Party Board

Turn this into a full platter by adding:

• Fresh mango slices
• Cherry tomatoes
• Black beans
• Crumbled queso fresco
• Extra infused olive oils for drizzling

This easily becomes the most talked-about dish on the table.

Enjoy!
