Cranberry Walnut Turkey Salad

2-1/2 cups leftover turkey, chopped
1/2 cup mayonnaise
2 Tbs. sour cream
1 tsp. dijon mustard
1 Tbs. Herbs de Provence olive oil
2 tsp. Apricot balsamic vinegar
1/2 tsp. sea salt
1/2 tsp. black pepper
1/3 cup diced celery
1/4 cup diced red onions
1/2 cup dried cranberries
1/4 cup walnuts, chopped
1/4 cup parsley, chopped
In a medium bowl, whisk together mayonnaise, sour cream, dijon mustard, Herbs de Provence olive oil, Apricot balsamic, salt and pepper. Add celery, onions, cranberries, walnuts and parsley. Gently fold in chopped turkey. Cover and refrigerate for at least an hour. Serve over salad greens, or make it into a sandwich.
