Crispy polenta bites make the perfect balanced snack or easy weeknight meal!
Slice polenta into 1/4” rounds. Lightly brush with Big Horn Olive Oil and bake at 375 on a lined sheet pan for 25 mins, flipping once. Brush with mashed beans and favorite toppings (👆here are peppers, shredded spinach, olives, and cheese). Bake for another 5-7 to melt cheese. Enjoy!
