Ultra Premium Medium EVOO
Our Ultra Premium Extra Virgin Olive Oils (EVOO) are harvested green off the tree, processed within 2 to 4 hours after harvest, and are recognized as within the top 5% of olive oils in the world. Since our UP EVOOs change seasonally, the varietals will change depending on which harvests are available.
A medium EVOO will usually have a fruity taste, and a spicy or peppery finish.
Varietals available will usually be from a selection of: Arbequina, Athinolia, Koroneiki, Nocellara, Picual

Traditional Dark Balsamic Vinegar
When it comes to Traditional Dark Balsamic Vinegar from Modena, Italy, this is the best stuff on the planet! Our finest grade of aged balsamic condimento made using the traditional Solera system, this rich Balsamic Vinegar is aged up to 18 years in chestnut, oak, mulberry, and ash barrels.
With 4% acidity, it exceeds Four Leaf Quality with an astonishingly high density of 1.28+. This spectacular density comes naturally without thickeners or added sugar from a lengthy aging process and cooking in copper kettles. It is exceedingly rich, complex, and dense. The Traditional Balsamic Vinegar pairs beautifully with any EVOO in our collection.
