Today we’re serving up this Savory Soybean Succotash. Packed with vibrant color and mega flavor, this quick dish makes a perfect side or simple weeknight meal.
2 cups shelled edamame
1 cup corn kernels
2 bell peppers, any color, diced
1/2 red onion
1/3 cup crumbled feta
2 tbsp fresh dill sprigs (or 1/2 tsp dried)
1/8 tsp each, garlic powder, salt, and pepper, or, to taste
2 tbsp Big Horn UP Extra Virgin Olive Oil
Directions: Heat oil in a medium skillet over medium heat. Add corn, red onion, and dry seasonings and sauté for 4-5 minutes, or until corn is golden and onion is translucent. Add peppers and sauté another 1-2 minutes, or until peppers are slightly tender yet firm. Add edamame and stir until well mixed. Remove from heat. Stir in feta cheese and garnish with dill.
