Sweet Potato Hash with Fresh Pesto

Are you a skillet meal fan? We sure ARE! 🤩 One pan meals like this Sweet Potato Hash with Fresh Pesto are quick, delicious, and a hit with the whole family!

•3 medium sweet potatoes, diced •1/2 red onion, diced •2 bell peppers, diced •4-6 eggs •Pesto: 1 large bunch basil, 2 cloves garlic, 1/4 cup Big Horn UP extra virgin olive oil, 1/4 tsp each, dried rosemary, dried parsley, dried thyme, dried oregano + salt and pepper, to taste)

Directions: preheat oven to 400 degrees. Heat 1-2 tbsp Big Horn olive oil in a cast iron skillet over medium heat. Add peppers and onion and sauté over medium high heat until tender. remove and set aside. Add sweet potatoes and a pinch of salt and pepper and cook for 10-12 minutes, or until potatoes are slightly tender and can be pierced with a fork. Remove from heat and carefully crack 4-6 eggs on top of skillet mix, evenly spread apart. Place skillet in oven for 11-15 minutes, based on egg cook preference. Note: 11-12 mins will result in an over easy egg, 13-14 over medium, 15+ fully cooked. Top with pesto and enjoy! Recipe: @compstonkitchen
