Sun-dried Tomato Tapenade
3/4 c. sun-dried tomatoes
2-3 T. capers, to taste
1 cup parsley
3 cloves garlic
1/2 cup Tuscan Herb olive oil
salt & pepper to taste
Place tomatoes, capers, parsley, and garlic in a food processor.
Blend until almost smooth. Drizzle Tuscan Herb Olive Oil as the processor is running. Add salt & pepper to taste. Makes about 1 cup.
Serve on baguettes.
Slice baguette into serving-size slices. Brush with Persian Lime olive oil and bake for 10 to 15 minutes at 350 degrees.
