Ingredients:
- 1 Large Bunch of Curly Kale
- 1 Apple (any variety, diced)
- 1/3 Cup Dried Cranberries or Cherries
- 1/4 Cup Sliced Slmonds
- 2 Tbsp + 1 Tbsp Big Horn Lemon Olive Oil
- 2 tbsp Big Horn Black Cherry Balsamic Vinegar
- Salt and Pepper (to taste)
Directions:
Step 1: Whisk together 1 tbsp olive oil and balsamic vinegar; set aside.
Step 2: Thoroughly wash kale. Drain leaves and pat dry.
Step 3: Tear leaves into bite sized pieces.
Step 4: Drizzle kale with 2 tbsp olive oil and sprinkle with a few pinches of salt.
Step 5: Massage kale leaves for 1 minute, until evenly coated.
Step 6: Add diced apple, dried cranberries, almonds and vinaigrette to Kale, and toss well to mix.
Step 7: Serve immediately.
