Holiday Salad Recipe

We're shocking nobody when we say the holidays can be a pretty hectic, often-stressful time. While there IS so much to enjoy about this time of year, it's not a bad idea to take certain measures here and there to mitigate stress by nourishing our bodies and minds!

One relatively easy variable we can control in the time between Thanksgiving, Christmas, and the New Year is our nutrition. Go hog-wild on the holidays themselves, but maintaining a healthy diet in between can go a long way in making some of those holiday challenges seem less daunting.

Big Horn's very own Holiday Salad is an excellent place to start!

It's perfectly seasonal thanks to its holiday flavors of crisp apples, dried cranberries, and spiced pecans, but most importantly, it provides an excellent boost of healthy live enzymes and vitamins to keep you going strong this holiday season! 

Ingredients:

(Note: Amounts and ratios will depend on your needs and preferences.)

- Salad Mix (You're welcome to use spring mix, but baby red and green romaine, baby spinach, arugula, or a combo of the aforementioned would also do nicely!)

- Apples (Sliced thinly. Honeycrisp apples would be ideal here.)

- Spiced Pecans (Roasted / candied pecans or roasted / candied walnuts will do here as well.)

- Dried Cranberries

- Blue Cheese (Crumbled)

Vinaigrette:

- Big Horn UP Olive Oil (Mild, Medium, or Robust - Any and all will be tasty!)

- Big Horn Traditional Dark Balsamic Vinegar OR (For a lighter vinaigrette with a kick!) Big Horn Serrano Honey Vinegar

Instructions:

Step 1: Slice the apples thinly (1/5th of an inch or so).

Step 2: Toast the pecans / walnuts in a 400 degree oven (if not already candied / roasted).

Step 3: Gently mix & incorporate all ingredients of the salad.

Step 4: Whisk together the oil and vinegar to create a vinaigrette.

Step 5: Drizzle vinaigrette over salad and serve.
