Lettuce-Free Greek Inspired Salad Recipe

Well, that might not be "news" to everyone, but we're still happy to provide the reminder that traditional Greek Salad is all flavor and no filler. :-) And Big Horn's take on this beloved salad honors that bold authenticity.
Our Greek Salad is not only deliciously traditional, but it's also highly nutritious (we're talking to you, Mediterranean Diet fans)!
What's more is this recipe is a breeze to toss together. Whether you're whipping up a healthy weeknight dinner, or you're in search of the perfect on-the-go lunch, you'll want this salad in your rotation!
Ingredients:
- 2 Cucumbers
- Shredded Chicken (Whatever amount you prefer)
- 1/2 Cup Cherry Tomatoes
- 1/4 Cup Red Onion
- Several Mini Bell Peppers (These will be chopped. Include as many or as few as you see fit!)
- 2 Tablespoons Kalamata Olives
- 1 Tablespoon Capers
- 1 Tablespoon Chickpeas (Crunchy, baked, or raw - your choice!)
- 1 oz Feta Cheese
- Salt and Pepper (to taste)
- Fresh dill (to taste)
Dressing:
- 1/4 Cup Big Horn Basil, Garlic, Lemon, or one of our Ultra Premium EVOOs
- 2 Tablespoons Sicilian Lemon Balsamic
- 1 Tablespoon Sherry Vinegar
- Garlic Powder, Salt and Pepper (to taste)
Directions:
Step 1: Chop cucumbers, red onions, cherry tomatoes, mini bell peppers, and olives into larger pieces of roughly similar size.
Step 2: Whisk dressing ingredients together.
Step 3: In a large mixing bowl, combine & mix the chopped veggies, shredded chicken, chickpeas, capers, feta, and dressing.
Step 4: (Optional): Add salt / pepper to taste, and garnish with fresh dill.
